It Started With Maggi, Chai and Conversations
Long before Terrassen cafe existed, there was the DCE campus. During the years at Delhi College of Engineering (DCE), now known as Delhi Technological University (DTU), some of the most memorable lessons came from places that never appeared on a syllabus. They came from tea stalls, shared plates of Maggi and endless cups of chai. They came from conversations that started casually and somehow stretched late into the evening.
Like generations of DCE students before us, we spent countless hours around one of the campus legends: Maggi Baba. To outsiders, it was simply a place to grab a quick bite. To students, it was something far more important. It was where friendships were built, where ideas were challenged, where entrepreneurial dreams were discussed and where future careers were imagined over chai and Maggi.
Looking back, it is easy to see why those memories stayed with us. The chai itself was never really the point. The conversations were. The people were. The feeling of belonging was. Years later, while building Terrassen cafe, that lesson remained surprisingly relevant.
The best hospitality experiences are rarely about products alone. They are about creating a space where people want to stay a little longer than they planned. They are about creating an environment where conversations flow naturally, ideas take shape and strangers become regulars. In many ways, the spirit of those evenings at DCE still influences how we think about hospitality today.
The Tea Stall Was Never Really About Tea
Every college has one. The tea stall where everybody eventually ends up. It becomes an unofficial meeting room, a brainstorming space, a therapy session and a social club all at once. Ideas are born there. Friendships are formed there. Business plans are discussed there. Dreams are tested there. Nobody visits because the furniture is beautiful.
Nobody visits because the presentation is perfect. People return because of how the place makes them feel.
Years later, when we started thinking seriously about hospitality, that lesson stayed with us.
A great cafe is not built around tables and chairs. A great cafe is built around moments.
Learning From Street Food Culture
Indian street food culture is one of the greatest hospitality schools in the world. Not because it is expensive.
Because it is honest. Street food vendors understand something many restaurants forget. People are not only buying food.
They are buying familiarity. A favourite vendor remembers your order. A tea seller remembers your face. A simple interaction becomes part of someone's daily routine. Growing up around these experiences changes the way you think about hospitality.
It teaches you that consistency matters. Warmth matters. Human connection matters. The most memorable food experiences are often the simplest ones.
From Student Dreams to Building a Cafe
At some point, conversations stop being ideas and start becoming reality. The transition from student life to helping build a cafe brought entirely new challenges. Suddenly food was not just something you consumed. It became something you studied. Something you refined. Something you shared with others. You start paying attention to ingredients. To service. To atmosphere. To why people smile after tasting something familiar. You begin to understand that every item on a menu carries a story.
Some stories are generations old. Others are still being written. Our vegan chai belongs somewhere between the two.

Why We Created a Vegan Chai
When Terrassen cafe was created, one decision shaped everything else. Every item would be completely plant based. That immediately created an interesting challenge. How do you take something as culturally familiar as Indian chai and recreate it without dairy?
The obvious answer would have been to simply replace the milk. But that felt incomplete. The goal was never to create a substitute. The goal was to preserve an experience. We wanted the warmth. The comfort. The nostalgia. The feeling of sitting with friends over a cup of chai while the conversation slowly becomes more interesting than the drink itself.
If we could preserve that feeling, the recipe would take care of itself.

What Makes Vegan Chai Different?
Traditional chai is often associated with milk, but its soul has never been dairy.
Its soul is the ritual. The spices. The aroma. The pause it creates in a busy day.
A well-made vegan chai keeps all of those things intact. The tea remains. The spices remain. The experience remains. Only the ingredients evolve.
For many guests, especially those who are lactose intolerant or exploring plant-based diets, vegan chai offers a way to enjoy a familiar tradition without compromise.
Chai Is Really About People
Ask somebody to describe their favourite chai memory. Most will not talk about ingredients. They will talk about a person. A friend. A parent. A college roommate. A roadside vendor. A rainy evening. A train journey. A conversation. That is what makes chai specialAnd that is why we continue serving it. Not because it is trendy.
Not because it is vegan.
But because it reminds us that some of the best moments in life happen over something as simple as a cup of tea.
